By adding instant pudding to the batter and beating it on high speed with electric beater it will increase volume of batter and make more bars
I made 24 bars and had enough batter for 4 cupcakes.
- 1 Box Duncan Hines Dark Chocolate Fudge Mix
- 1 1/3 cup water
- 1 Snack size applesauce (instead of oil)
- 3 Large eggs
- 1 Box of instant chocolate pudding
- 1 Cup of pecans finally chopped
- 2 Cups of shredded coconut
- In bowl mix first five ingredients and mix on low speed first for about 1 minute and then on high for an additional minute. Doing this will increase the volume of the batter.
- I used chopped pecans and put them in a food processor for an additional chop.
- Fold pecans into batter along with coconut.
- Using ice cream scoop and a spatular place batter in creased bar tins.
- Bake as directed for cupcakes
