Dark Chocolate Fudge Pecan, Coconut Pudding Bars

Recipe Description
By adding instant pudding to the batter and beating it on high speed with electric beater it will increase volume of batter and make more bars I made 24 bars and had enough batter for 4 cupcakes.

Ingredients Baking Instructions
  • 1 Box Duncan Hines Dark Chocolate Fudge Mix
  • 1 1/3 cup water
  • 1 Snack size applesauce (instead of oil)
  • 3 Large eggs
  • 1 Box of instant chocolate pudding
  • 1 Cup of pecans finally chopped
  • 2 Cups of shredded coconut
  1. In bowl mix first five ingredients and mix on low speed first for about 1 minute and then on high for an additional minute. Doing this will increase the volume of the batter.
  2. I used chopped pecans and put them in a food processor for an additional chop.
  3. Fold pecans into batter along with coconut.
  4. Using ice cream scoop and a spatular place batter in creased bar tins.
  5. Bake as directed for cupcakes
