As one of my all-time favorite cakes, it's perfect around Christmastime. The spicy flavors of clove, cinnamon, and plums mix beautifully with a tangy lemon glaze. Even a novice baker could pull this one off.
- 2 cups self-rising flour
- 1 tsp. cinnamon
- 1 tsp. ground cloves
- 2 cups sugar
- 1 cup oil
- 3 eggs, beaten
- 2 small jars of plum baby food
- 1 cup chopped pecans
- 2 cups powdered sugar
- 2 tbsp. melted butter
- Lemon juice
- Heat oven to 350 degrees F.
- Grease and flour a 10-inch Bundt pan.
- Sift flour, cinnamon, and cloves in a bowl; set aside.
- Combine sugar and oil in a large bowl. Beat in eggs and stir in baby food.
- Add the flour mixture, mixing gently until blended.
- Fold in pecans.
- Bake in prepared pan for 1 hour and 20 minutes, or until toothpick inserted in cake comes out clean.
- Invert cake onto a cooling rack to cool.
- For glaze, mix powdered sugar, melted butter, and enough lemon juice for drizzling consistency.
- While still warm, prick cake with a fork and pour glaze over it.
- Though it's always tasty, I like this cake best when it's still warm.

My neighbor used to make this for Christmas when I was a girl, which is going back a ways. Its a wonderful cake; moist with just the right amount of spice.
