Recipe Description
As one of my all-time favorite cakes, it's perfect around Christmastime. The spicy flavors of clove, cinnamon, and plums mix beautifully with a tangy lemon glaze. Even a novice baker could pull this one off.

Ingredients Baking Instructions
  • 2 cups self-rising flour
  • 1 tsp. cinnamon
  • 1 tsp. ground cloves
  • 2 cups sugar
  • 1 cup oil
  • 3 eggs, beaten
  • 2 small jars of plum baby food
  • 1 cup chopped pecans
  • 2 cups powdered sugar
  • 2 tbsp. melted butter
  • Lemon juice
  1. Heat oven to 350 degrees F.
  2. Grease and flour a 10-inch Bundt pan.
  3. Sift flour, cinnamon, and cloves in a bowl; set aside.
  4. Combine sugar and oil in a large bowl. Beat in eggs and stir in baby food.
  5. Add the flour mixture, mixing gently until blended.
  6. Fold in pecans.
  7. Bake in prepared pan for 1 hour and 20 minutes, or until toothpick inserted in cake comes out clean.
  8. Invert cake onto a cooling rack to cool.
  9. For glaze, mix powdered sugar, melted butter, and enough lemon juice for drizzling consistency.
  10. While still warm, prick cake with a fork and pour glaze over it.
  11. Though it's always tasty, I like this cake best when it's still warm.

My neighbor used to make this for Christmas when I was a girl, which is going back a ways. Its a wonderful cake; moist with just the right amount of spice.
