Create the perfect cake for your next birthday celebration! Inspired by an online search, I recreated this melting masterpiece! So easy, even an amateur baker like myself was able to pull it off. I made this cake this weekend for my daughter's first birthday party. She loved it!!
- Cake Mix (Choose your favorite)
- Eggs
- Vegetable Oil
- Water
- Vanilla Icing (avoid whipped)
- Red Food coloring (optional color choices)
- Baking non-stick spray (with flour is best)
- Duncan Hines Glaze (Chocolate)
- Rice Krispies cereal
- Butter
- Marshmallows
- Sugar Cone
Cake:
- Spray two 6" round cake pans with nonstick spray.
- Bake 2 cakes according to the instructions of your cake mix.
- Allow the cakes to cool in their pans 10 mins.
- Flip upside down to remove. (With good non-stick spray they should come out easily)
- Once cakes have cooled. Use a bread knife to cut off each dome to level.
Icing:
- Scoop your favorite icing (pre-made is just as easy) into a medium mixing bowl.
- Add 2-3 drops of red food coloring (to make pink icing) and mix well.
- Place first cake layer on base, cut side down.
- Apply icing to the top of this layer and then place the next cake cut side down.
- Generously apply icing around the sides and top of the cake.
- Smooth with knife or spatula, place in fridge to cool and set.
"Melting" Ice Cream Cone:
- Make Rice Krispie treat mixture as instructed per recipe on cereal box.
- Take a scoop of the gooey cereal mixture and with your hand form a ball with a ridge around the edge. (Imagine what a scoop of ice cream would look like once it starts to melt on a plate.)
- Place on a greased plate. (Important for easy removal)
- Let set. You can quicken this process by placing temporarily in the fridge or freezer.
Glaze:
- While your Rice Krispie ice cream "scoop" is setting, remove cake from fridge.
- According to the instructions, warm your bottle of glaze. Shake well.
- The glaze is appropriate to use when the consistency is that of smooth syrup.
- Drizzle the glaze along the top of the cake, letting it run off the sides. I find starting at the edge to get each drip was more succesful, then I filled the middle to cover the top of the cake.
- Allow the cake to sit at room temperature to set.
- Remove your Rice Krispie ice cream "scoop" from the fridge.
- Steadily drizzle the glaze ontop of this "scoop" allowing some to drizzle onto the plate.
- Once covered it should resemble a scoop of melting ice cream.
- Quickly add a sugar cone to the "scoop".
- Add sprinkles.
- Once set, remove with spatula and place ontop of cake

Thanks! I did a practice version first, so I learned my mistakes. We had hired a professional photographer for the party, so hopefully soon I will have a better close up of the cake to share!
