Spicy Caramel Apple Cupcakes

Ingredients

  • 1 packet of Duncan Hines® Frosting Creations™ Caramel Flavor Mix and 1 can of Frosting Creations™ Frosting Starter
  • 1 box spice cake mix
  • 1 granny smith apple, peeled and cut into small pieces
  • 1/2 cup water
  • 2 eggs
  • 1/3 cup oil
  • 2/3 c. pecans
  • 2 T. butter
  • 2 T. sugar
  • 1/2 t. salt

Baking Instructions

  1. Preheat oven to 350. Line 18-20 muffin tins with cupcake liners.
  2. In a medium bowl, combine cake mix, water, eggs, and oil. Mix until very well combined, and you can see no lumps. Fold in the apple.
  3. Fill muffin cups 2/3 full with the cupcake mix, place in a preheated oven, and bake 16-22 minutes, until toothpick inserted into center of cupcake comes out clean.
  4. While cupcakes are baking, prepare pecans. In a small sauce pan, melt butter over low heat.
  5. Add sugar, salt, and 1/8 t. Duncan Hines® Frosting Creations™ Caramel Flavor Mix. Mix until well incorporated. Toss nuts in butter mixture.
  6. Spread pecans evenly on a cookie sheet, and bake for 5-7 minutes, until golden brown and you can smell the pecans. Let cool.
  7. Pour pack of Duncan Hines® Frosting Creations™ Caramel Flavor Mix (minus the 1/8 teaspoon you used for the pecans) into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended.
  8. Frost cupcakes with caramel frosting, and top with 1-2 cooled pecans.

I have a small trigger ice cream scoop for cookies. Regular size trigger ice cream scoop for cupcakes Plus spatula. Cookies come out even shape. Spatula is used after you scoop batter to level top of each scoop before put in cupcake tin or place on cookie sheet.

Gently beat the filling after you add the eggs and stir in the remaining ingredients by hand. Vigorous beating will allow too much air which may cause the cheesecake to puff up, then fall and crack. As a test for doneness, if the cake jiggles, return it to the oven for more baking. Inserting a knife for this purpose may cause the knife hole to grow into a large crack. Also, set a minute timer for the exact cooling time recommended in the recipe.
