Chunks of apple in a spicy cupcake, with a caramel frosting - all topped with caramel flavored pecans.
- 1 packet of Duncan Hines® Frosting Creations™ Caramel Flavor Mix and 1 can of Frosting Creations™ Frosting Starter
- 1 box spice cake mix
- 1 granny smith apple, peeled and cut into small pieces
- 1/2 cup water
- 2 eggs
- 1/3 cup oil
- 2/3 c. pecans
- 2 T. butter
- 2 T. sugar
- 1/2 t. salt
- Preheat oven to 350. Line 18-20 muffin tins with cupcake liners.
- In a medium bowl, combine cake mix, water, eggs, and oil. Mix until very well combined, and you can see no lumps. Fold in the apple.
- Fill muffin cups 2/3 full with the cupcake mix, place in a preheated oven, and bake 16-22 minutes, until toothpick inserted into center of cupcake comes out clean.
- While cupcakes are baking, prepare pecans. In a small sauce pan, melt butter over low heat.
- Add sugar, salt, and 1/8 t. Duncan Hines® Frosting Creations™ Caramel Flavor Mix. Mix until well incorporated. Toss nuts in butter mixture.
- Spread pecans evenly on a cookie sheet, and bake for 5-7 minutes, until golden brown and you can smell the pecans. Let cool.
- Pour pack of Duncan Hines® Frosting Creations™ Caramel Flavor Mix (minus the 1/8 teaspoon you used for the pecans) into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended.
- Frost cupcakes with caramel frosting, and top with 1-2 cooled pecans.
