Coco-Pineapple Cake

Recipe Description
This is a rich and very moist coconut-pineapple cake. It will melt in your mouth and have all your friends wanting you to bake this cake for them.

Ingredients Baking Instructions
  • Moist French Vanilla Cake Mix
  • 3 eggs
  • 1/2 stick of butter
  • 3/4 cup of milk
  • 1 block of cream cheese
  • 1 medium can of chuncked pineapple
  • 2 tbsp. of coconut rum
  • 1 box of coconut pudding mix
  1. Put all your ingredients into a large mixing bowl and mix with an electric mixer first on low to incorporate the eggs without all the mess and then on medium for about 5 minutes till the batter is smooth yet has a thick consistency.
  2. Ready your baking pan(s) with butter and a little bit of brown sugar.
  3. Pour batter into your baking pan(s) and leave about an inch from the top for expansion though it should fall during the cooling process.
  4. Bake your cake(s) for 38 minutes at 350 degrees. Remove cakes when they are still moist...another words, your toothpicks or knives should not come out clean.

I tried this delicious recipe! I wasn't sure which size cream cheese, so I used the larger one. Very tasty and creamy.But next time I will try the smaller cream cheese. I could'nt find the regular coconut pudding mix so I used the instant coconut pudding mix. Wonder if that made any difference. It could have used more coconut flavor so next time I will add 1/2 of toasted coconut flakes on top. Thanks

I used a container of "whipped" sour cream and it was awesome!

Ya know, I don't like coconut flakes that much but love the flavor, and this recipe I think would work for me! Thanks for posting!
