Delicous loaf cake. Served in slices, delicious with fruit topping.
- 1 1/2 cups butter/margerine (soft)
- 2 1/4 cups granulated sugar
- 6 large eggs
- 1 tbsp vanilla extract
- 3/4 tsp salt
- 3 cups cake flour
- Confectioners sugar to garnish
- Grease large loaf pan. Preheat oven to 325 F.
- Beat butter and sugar with mixer on low speed to blend, when blended advance to high speed.
- Beat on high for about 5 minutes until light and airy.
- Reduce speed to medium to add eggs on at a time.
- After eggs, add vanilla and salt.
- Scrape bowl, return to high speed for 3 more minutes.
- Carefully stir in flour with whisk.
- Spoon batter into pan. Bake for about 1 hour, check using toothpick test.
- Allow to cool and dust with powdered sugar.
- You may also use a bundt pan for this.
