This is a delicious and moist cake. It also stays fresh for days.
- 3 sticks margarine or butter
- 3 cups sugar
- 5 eggs
- 3 cups flour
- 2 tsp. lemon extract
- 3/4 cup 7-Up soda
- Preheat oven to 350 degrees F and lightly grease and flour a 12-cup Bundt pan.
- In a mixing bowl, cream margarine and sugar for 2 minutes, until smooth.
- Add eggs one at a time, beating well after each addition.
- Add lemon extract.
- Add flour one cup at a time and then add the 7-Up.
- Beat until creamy for 1 minute.
- Pour into pan and bake.
- For a glaze, take 2 cups confectioners sugar and add lemon juice or milk to thin to spreadable consistency.

my biggest problem with my 7-up cakes is that they are to heavy. Some people say that i should cream it for 20 minutes. can I get some help with this?
