This is one of my favorite "Take-along-cakes". It is quick and easy to transport to a potluck or picnic. It is also great to keep on hand for a quick snack with a glass of cold milk. My daddy loved it!
Easy Apple Sauce Raisin Spice Cake:
- 1 Duncan Hines Spice Cake mix
- 1 Cup Mott's Chunky Apple Sauce
- 1/3 Cup vegetable oil
- 3 Large eggs, room temperature
- 1/2 - 1 cup raisins
- 1.) Preheat oven to 350 degrees F. In a bowl, combine 1/4 cup of the cake mix and raisins, tossing to coat raisins (this will keep raisins from sinking in the cake).
- 2.) In a large bowl, combine the rest of the cake mix, apple sauce, oil and eggs. Blend according to cake mix directions on package. Fold in the reserved cake mix/raisins, mixing on low speed or by hand, to blend well.
- 3.) Pour into a greased and floured 9x13 inch baking pan. Bake according to package directions for 9x13 pan. Remove from oven to a wire rack.
- 4.) While cake is still hot, sprinkle HEAVILY with icing sugar (powdered sugar). The icing sugar will melt down, as it does sprinkle again to make a nice coating of icing sugar.
- 5.) Serve warm with a scoop of vanilla ice cream and drizzle with warm caramel ice cream topping, if desired.
- Or for quick snack, just sprinkle the top with icing sugar once more, just before serving.
