Pineapple Orange Dream Cake

Recipe Description
This chilled moist cake with its bits of oranges and topped with a tall fluffy pineapple "froting" is a refreshing summer treat with any meal.

Ingredients Baking Instructions
  • 1 Duncan Hines yellow cake mix
  • 1 stick butter melted
  • 1 sm. can (11oz) mandarin oranges with juice
  • 3 eggs
  • 3/4 cup veg oil

Frosting:

  • 12 oz whipped topping (cool whip)
  • 1 reg. box instant vanilla pudding (dry mix)
  • 1 sm. can crushed pineapple with juice.
  1. Blend cake mix, butter, eggs, oil and juice from oranges 4 min. Fold in chopped oranges. Pour into greased and floured 9X13 baking pan.
  2. Bake @ 375 for 30-35 min.
  3. Frosting:

  4. Mix topping, pudding and pineapple with juice and "frost" cooled cake.
  5. Keep chilled

is the whipped topping a frosting or a heavy cream mix or whipped cream? i think the pineapple juice would break down the whipped cream and be real runny does this ever happen?

Cool Whip or whatever brand you like and no it doesnt break it down because of the dry pudding mix. Its great

This cakes is definitely delicious! I usually make it in a layer cake, and down south we refer to this as "peking cake". Be sure to store in fridge.

haha Shirly... my daugther got this recipe from her MIL. and it was titled "Pig Lickin"! I couldnt stand that name so I chose a name that described the taste and texture. We are from Missouri.

About the frosting ... I'm assuming the "instant vanilla pudding" is mixed DRY with the whipped topping and can of pineapple. I hope this is correct because this recipe sounds so good I can't wait to try it.
