Kids want one of those fancy ice cream cakes? Don't pay the huge price, make it yourself. It's SOOOO simple!!

- Allow ice cream to soften.
- Line clean cake pan with foil.
- Once softened, press ice cream into cake pan. Place in freezer to re-harden.
- Bake cake according to package directions for a two layer cake. Be sure the pan size is the same as that used for the ice cream.
- Cool cake completely, removing from pan as instructed on package.
- Once ice cream has hardened and cake is cooled, remove ice cream from pan.
- Stack layers of cake and ice cream with the ice cream as the middle layer.
- Frost cake using warm water to dip the frosting utensil in. This allows the frosting to thin a little and allows it to spread more easily. The outer layer of ice cream will melt slightly and mix with the frosting.
- Once frosted, return cake to freezer. Will keep in freezer up to two days.

I made this cake for my daughter using a Devil's Food cake and mint chocolate chip ice cream. I used vanilla frosting colored green. When the ice cream melted, it flavored the frosting mint. The whole family loved it.
