Moist banana cake topped with vanilla ice cream, whipped caramel frosting, toasted coconut and macadamia nuts.

Ingredients Baking Instructions
  • Nonstick cooking spray
  • 1 pkg. Duncan Hines Moist Deluxe Banana Supreme Cake Mix
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/3 cup vegetable oil
  • 1/3 cup coconut milk
  • 1/3 cup evaporated milk
  • 1 quart vanilla ice cream, softened
  • 1 cup heavy whipping cream
  • 1 can Duncan Hines® Frosting Creations™ Frosting Starter
  • 1 packet Duncan Hines® Frosting Creations™ Caramel Flavor Mix
  • 1/2 cup toasted sweetened flaked coconut
  • 1/2 cup coarsely chopped toasted macadamia nuts
  1. Heat oven to 350 degrees F. Coat a 10-inch springform pan with nonstick cooking spray.
  2. In a large bowl, using a mixer on low speed, beat together cake mix, eggs, sour cream and vegetable oil until moistened.
  3. Increase speed to medium, and mix for 2 minutes, until well incorporated.
  4. Place batter into prepared pan.
  5. Bake 30-35 minutes, or until golden brown, cake pulls away from edges of pan, and a toothpick inserted comes out with moist crumbs attached.
  6. Cool 10 minutes on a wire rack.
  7. Generously poke cake with a wooden skewer.
  8. Stir together coconut milk and evaporated milk in a small bowl.
  9. Using a pastry brush, brush milk mixture on top of cake, until all of the milk is absorbed; repeat process with remaining milk.
  10. Freeze cake for 30 minutes, or until cold.
  11. Evenly spread ice cream on top of cake. Freeze cake for 30 minutes.
  12. In a large bowl, using a mixer on high speed, beat heavy cream until stiff peaks form - about 3-4 minutes.
  13. On medium speed, mix in frosting starter and flavor mix until combined - about 1-2 minutes.
  14. Run a knife around outer edges of cake, and remove outer ring. Frost top and sides of cake with whipped frosting.
  15. Sprinkle coconut and macadamia nuts on top of cake. Freeze 1 hour, or until ready to serve.

can't find coconut milk in my area any suggestions on what I can use instead of the coconut milk... thanks

If you can't find coconut milk...use condensed milk...
