Yummy!
- 1 cup chopped pecans
- 1 8-ounce can coconut
- 1 box vanilla wafers
- 1 cup butter
- 2 cups sugar
- 6 eggs
- 1/2 cup milk
- Preheat oven to 350 degrees.
- Crush vanilla wafers;pour into large bowl with pecans and coconut.
- Add eggs, one at a time, beating well after each addition to the melted butter and sugar.
- Add dry ingredients to the egg mixture.
- Add 1/2 cup milk.
- Pour batter into well-greased tube pan.
- Bake at 350 degrees for 1 hour.
- This cake freezes well.

I have made this cake many times. I usually use a box and a half of crushed vanilla wafers and 2 cups of pecans. The trick to doing this in a bundt pan is to line the bundt pan with wax paper and bake at 300 degrees for 1 hour and 50 mins. Comes out perfect everytime!

Do not make this cake in a bundt pan. You will be sorry. I greased my pan very well and floured it. I ran a spatula all around the cake after cooling in the pan for 10 to 15 minutes. My cake came out in pieces. Several of them. Ruined my surprise for my husband and some other family members I was going to take some to. It is a very good cake. Very good. Just save yourself the disappointment and use a 9x13 pan. I saw on some other sites where they said you could use a springform pan but I don't know about that. I would give this cake a 5 star for taste but only a one for pan instructions, so I guess overall a 3. I repeat--it is very good!! When you mix the cookie crumbs, pecans and coconut in a bowl you will be in Heaven right then, before you even get the rest of it together!
