Raspberry Swirl Cake

Recipe Description
Give this Duncan Hines French Vanilla Cake the red raspberry treatment. You can make Raspberry Swirl Cake as pretty as it is delicious with your own creative drizzle effects.

Ingredients Baking Instructions

Cake:

Raspberry Sauce:

  1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. Prepare, bake and cool cake according to package directions.
  3. While cake is baking prepare raspberry sauce. Place sieve over small saucepan. Push raspberries through sieve with spoon. Discard seeds. Add jam. Dissolve cornstarch in water in small cup. Add to saucepan. Cook on medium heat, stirring constantly, until sauce comes to a boil and thickens. Cool.
  4. To assemble, place one cake layer on plate. Spread with raspberry sauce, reserving enough to drizzle on top. Place second layer on top. Frost sides and top of cake with cream cheese frosting. Drizzle with reserved sauce. Run knife through frosting and sauce to swirl.

Needs Sugar! The Raspberry suace needs at least 1/4 cup of sugar. As is it is bitter and just blech.

I didn't have any raspberry jam, so I used plum, and it turned out great! The only difficult part was spreading the frosting on top of the plum sauce. It ended up blending together.

Wow! That was the response from everyone who saw this cake. Nice easy way to dress up a white cake with just a little pizzazz.

NOrasberries,used frozen strawberries. (14OZ.) Blended on puree few seconds. Poured in saucepan. Added 3 generous tbls. preserves. Extra tbls.was to sweeten. When I tasted, good, but something off. Had put in cherry preserves!! Oh no! Taking cake to family gathering tonight. NOT SAYING A WORD ABOUT ANYTHING! Updates later.
