Guaranteed Triple Coconut Cake (Wintery Frost Cake)

This Guaranteed Triple Coconut Cake is so good we guarantee there will be no left over slices. Nothing is more elegant than Duncan Hines Classic White Cake with white coconut shavings on snowy white frosting. Enjoy!

Ingredients Baking Instructions
  1. Preheat oven 350 ºF. Grease and flour three 8-inch-round baking pans.
  2. In a large mixing bowl, blend the cake mix, coconut milk* and egg whites. Beat at low speed until moistened (about 30 seconds). Beat at medium speed for two minutes. Pour batter evenly among the prepared pans.
  3. Bake for 18 - 21 minutes or until toothpick inserted into the center comes out clean. Cool layers in pan on a wire rack for 15 minutes. Turn out of pan to cool completely before frosting.
  4. Place one layer on a serving plate. Spread a thin layer of coconut frosting on top and sprinkle with 1/4 cup of coconut. Repeat with second layer. Top with the third layer and frost top and sides of cake with remaining frosting. Sprinkle remaining coconut on top and sides of cake.

permelia: coconut milk is milk that come from grating a fresh coconut then adding water to the gratings and squeezing it through cheese cloth. That's if you want fresh milk, which is a lot of work. I only do it to make a Puerto Rican dessert called "tembleque" (coconut pudding). But you can get coconut milk in a can at the super market "ethnic" aisle. Goya is a hispanic brand which carries it, and in the Asian section you can also find it under a different name brand. Hope this helps!

Dose anyone have an easy yet less messy way to add the coconut to the sides? No matter what I try I always get the coconut or nuts all over the place. Any hints?

What is unsweetened coconut milk, do I need to buy a coconut to get this?

If you put your cake on a cakeboard and frost the sides first (leave the top unfrosted) you can carefully pick it up with one hand on top and one hand on the bottom and roll it in the coconut. Then frost the top and sprinkle it with coconut.

duncan hines are the best cake for flavor and a fine texture. i buy them when there on sale all the time. probably would make good chocolate, cookies.

I mix the coconut into the frosting and then frost the cake. This way the coconut doesn't get everywhere while you're frosting the cake or eating the cake.
