Coconut Cream Cake

Enjoy a tropical dessert with sweet, flakey coconut, Duncan Hines Classic White Cake and Creamy Home-Style Classic Vanilla Frosting.

Cake:

Frosting:

  1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. For cake, combine cake mix, pudding mix, eggs, water and oil in large bowl. Beat at low speed with electric mixer until moistened. Beat at medium speed for 2 minutes. Stir in 1/3 cup coconut. Divide into pans.
  3. Bake at 350°F for 32 to 37 minutes or until toothpick inserted in center comes out clean. Cool following package directions.
  4. Fill and frost cake. Sprinkle with remaining coconut. Refrigerate until ready to serve.

Added marshmell. creme and powered sugar with coconut. for a homemade icing. Usually add 2 to 1 in the measurements. less cream and more sugar. Also add some evaporated milk or use coffee creamer for the liquid. Use small amounts. Teaspoons at a time until you get to a spreading form. You will know.

I also use coconut extract and 7 minute frosting very good not to sweet. I left out the coconut as my husband doesn't like the crunch.

where can you even find coconut cream pudding mix? I've never seen that on the supermarket shelf.

I bought my coconut creme instant pudding mix from walmart here in Rome, GA. I bought plenty to keep on hand.

Jell-o pudding has that flavor. here where I live, Wal Mart has it in instant.

I too found this at my Walmart... I would try Target also, if your walmart doesn't have it.

Could not find the coconut pudding, I used vanilla and put some coconut extract in it. Came out delicious!

I coudn't find coconut pudding either so I used lemon. The batter was thick and I did add more coconut to batter than 1/3 cup. It's in the oven now and I hope it comes out okay. I might poke holes and drizzle liquer or brandy very sparingly. I'm thinking of making cream cheese, butter and powdered sugar frosting with some whipped cream. We shall see...I'll post results when I receive comments from my family. This is my first post.

love this recipe!! after cake was baked, i poked some holes into the layers and then added some coconut rum and then sprinked some toasted coconut sugar. also added coconut rum and extract to the frosting..... everyone loved it! (forgot to rate the first one :) )

This is a wonderful cake. Try adding my twist to the receipe. One heaping tablespon of Hellmans Mayo and 1 tsp of pure Mexico vanilla and, I promise it is the best thing you ever laid a lip on honey.

I actually haven't tried this recipe yet, but I had a suggestion. Instead of using coconut milk to add to the cake mix, use coconut flavor. I did a cake similar at Thanksgiving and it was wonderful. Taste just like coconut, without the coconut flakes which I don't like. Good Luck to you all.

Delicious! The pudding wasn't available, so I used a can of COCONUT MILK (not coconut cream for cocktails!) instead of the water and oil. I also toasted the coconut flakes before stirring into the cake. My husband made a glaze by cooking coconut milk with sugar until it thickened a bit, then poking holes in the cake and drizzled it over. Extremely moist, delicate coconut flavor!

This cake will taste much better if you add: 1/2 cups canola oil and 1 1/2 cups of water when using the Coconut instant pudding. If you do not wish to use the Coconut instant pudding; add 1 cup of sour cream and 1/2 cup of canola oil. My cake was very moist and taste delicious. Wal-Mart sells the Instant Coconut cream Pudding.

I'm new to the site as of today and found this recipe. I can not wait to try it. I read the previous reviews where someone used whipped cream instead of the frosting...I think I'll make mine that way too.
