Chocolate Banana Cake

Cake:

Topping:

  • 1 (3.4 oz) pkg banana cream instant pudding and pie filling
  • 1 cup milk
  • 1 cup whipping cream
  • 1 medium banana
  • lemon juice
  • sprinkle of cocoa powder for garnish
  1. Preheat oven to 350 ºF. Grease and flour 13x9x2-inch pan.
  2. For cake, combine cake mix, eggs, milk and oil in large bowl. Beat at low speed with electric mixer until moistened. Beat at medium speed for 2 minutes. Pour into pan.
  3. Bake at 350 ºF for 35 to 38 minutes or until toothpick inserted in center comes out clean. Cool completely.
  4. For topping, combine pudding mix and milk in large bowl. Stir until smooth. Fold in whipped cream. Spread on top of cooled cake. Slice banana; dip in lemon juice, arrange on top. Garnish with a sprinkle of cocoa powder if desired. Refrigerate until ready to serve.

Does the lemon juice just add flavor or what is the purpose for it?
I wonder what I could do to help preserve the freshness of the sliced banana on top before serving
Is the banana's dipped in lemon juice just for flavor? and say if I made these for an event..how could I keep the banana's from getting all brown until served if there isnt a fridge

I believe it is to keep the bananas from turning brown.

I changed the recipe a little by making the cake mix into cupcakes. And then for the frosting- I didn't have banana pudding (only vanilla) so I beat a banana in with the milk before adding the pudding mix and whipped cream. Then finished it by sprinkling some finely chopped pecans. It was sensational!

I tried this recipe over the weekend and it was awesome. I did add in banana extract to the mix which tasted great.

It says its a 1 layer cake same as the pic.!!!!

This is not a review, but a comment. After reading through the recipe and then looking at the picture, something just doesn't fit. It would appear that the picture displays a 3 layer cake while the recipe is for a one layer cake. Consistency please... Also the recipe should indicate at some point to whip the cream.

n case no one noticed, the pic of the three layer cake is not the same cake, that one is white or yellow cake with a chocolate cake recipe. I think it was poste in the wrong area!

I have to agree about the whipped cream. it should say 1 cup whipped cream, not whipping cream.
