Italian Love Cake

Recipe Description
This is a fantastic refreshingly rich Birthday cake with a wonderful cake base and a delicious cool topping. A nice change from the ordinary cake.

Ingredients Baking Instructions
  • 1 box fudge marble cake mix
  • 2 lbs. ricotta cheese
  • 3/4 cup sugar
  • 4 eggs
  • 1 tsp vanilla
  • 1 3oz box instant chocolate pudding mix
  • 1 cup milk
  • 1 8oz carton of whipped topping-defrosted
  1. Mix cake as directed.
  2. Pour into greased and floured 9 x 13 pan.
  3. In another bowl combine ricotta, sugar, eggs and vanilla.
  4. Mix well.
  5. Spoon over unbaked cake.
  6. Bake at 350 degrees 45-50 minutes.
  7. Cool.
  8. Mix pudding with milk.
  9. Fold in whipped topping.
  10. Spread over cake and refrigerate.

This cake is good but to make it even better i remove it from the pan, turn it right side up and pour chocolate ganache over it before i put the cool whip frosting on it. Ummmmm delish!!

Absolutely the best cake. Easy to make and so delicious. You can use differnet cake mixes and different pudding mixes. It's great with chocolate cake mix and pistachio pudding mix.
