Pineapple Inside Out Upside Down Cake

Ingredients

  • Cake Ingredients:
  • 1 box Duncan Hines Pineapple Supreme Cake Mix
  • 1 20 oz can Crushed Pineapple in Syrup
  • 1/3 cup Water
  • 3 Eggs
  • 1/3 cup Vegetable Oil
  • 1 cup Whole Maraschino Cherries Chopped
  • Frosting Ingredients:
  • 1 cup Milk
  • ½ cup Sugar
  • 4 tablespoons Flour
  • ½ cup or 1 stick ( unsalted) butter room temp.

Baking Instructions

  1. Cake Instructions:
  2. Add juice from pineapple, water, oil, and eggs to cake mix – blend well. Then add pineapple and maraschino cherries – stir until combined. Put in a 9x13 pan. Bake at 350 degrees for 30-40 minutes. Let cool before frosting.
  3. Frosting Instructions:
  4. Put in pot milk sugar and flour on low flame whisk together and often until thick. Pour onto a plate to cool. In a medium bowl cream butter for 4 minutes with mixture on high. When flour mixture is cool pour into creamed butter and cream for 4 minutes.

Non-fat Yogurt for Oil

Non-fat Yogurt for Oil

I have used a bit of the oil while replacing the rest with non-fat yogurt in both brownies and cakes. It produces a different texture and taste than applesauce. Experimenting will tell you which proportions of each you prefer...I've used different combinations and haven't been dipleased with any of my results!

I always add buttermilk , a little extra flour,(about 1/4 cup), and 1/4 cup of sugar. This makes a wonderful cake. I love Duncan Hines cake mixes.
