Candied Sweet Potatoe Cake

This is a cake that uses left over candied sweet potatoes (mostly syrup though). You just have to add one box of Duncan Hines Yellow Butter Recipe cake mix and 3 eggs to the left over candied sweet potatoes with syrup and bake for about 50 minutes at 350 degrees. What you have is a sweet cake that tastes just like candied sweet potatoes!!

Ingredients

  1. 1 box of Duncan Hines Yellow Butter Recipe cake mix
  2. 3 eggs
  3. 2 1/2 to 3 cups of left over candied sweet potatoes (mostly syrup)
  4. Powdered sugar

Baking Instructions

  1. Place the left over candied sweet potatoes and syrup into mixer.
  2. Add the 3 eggs and 1 box of Duncan Hines Yellow Butter Recipe cake mix.
  3. Mix together until well mixed (about 4 minutes).
  4. Pour into a 2" deep 10" cake pan or use 2 smaller cake pans that are well greased (with butter or butter flavored shortening).
  5. Bake until done. Single large cake pan may take around 50 minutes. Smaller ones around 25 minutes.
  6. Take cake out of pan and sift powdered sugar on it.
  7. You could also put some type of icing on it like a cream cheese icing. However, the cake is already very sweet.
