I had been baking for over 20 years and was still burning cookies! They are by far one of the most difficult to bake to a percise doneness! I found that to do a "test run" helps to end up with the most delightful results! Try baking a test batch with a couple of cookies before baking the entire batch. Test the timing; set the timer for a few minutes earlier than called for. Then, add a couple of minutes as necessary for the desired texture, allowing for continued cooking time during cool down.

i used to have burned or uneven browned cookies also UNTIL I bought 'airbake' cookie sheets. Now people think that my cookies are bought instead of home made...never a dark brown cookie!!

And I own a fancy, new range with the oven heating element under the "floor" -- hidden away. Its temperatures are precise but when baking cookies I still set the timer for just 1/2 of the recommended time. Then I turn the sheet around and reset the times for 1/2.

Yes, I too like to rotate the cookie sheets, but there was not enough room to include this step. I am so glad that you added it to the tip!
