Recipe Description
One ingredient I've added recently to my spice cake prep is the zest of one fresh lime. It adds a nice kick to an already zesty mix.

philrichard, yes, make sure it is baked completely. that has happened to me so many times because I was so anxious to get it out of the oven....

I 'm a newcomer to cooking and baking. Can anyone tell me why the center of my cake falls in after it comes out of the oven? It looks great when it is in the oven, but after it is out a few minutes,the center starts to cave in.

You may not be letting is bake all the way. You should use a tooth pic to gently stick in the center of your cake. It the toot pic comes out perfectly clean, then your cake is done and can come out. If it comes out and has some cake batter stuck to it, then the cake is not done and will 'fall' when you bring it out. If you are already doing this, you may look into what is possibly bumping the oven and rattling the floor by your oven. I have to kick my kids out of the house so they do not 'jar' my cake while it is baking.
